How to prepare - Avocado Muffins

1/4 c Butter Or Margarine

1/4 c Sugar

1 Egg

1 Pureed Avocado

1 c Toasted Slivered Almonds

1 c Milk

2 c Self-Rising Flour

Preheat oven to 400?F and prepare muffin pans.
Cream butter and sugar.
Beat in the egg.
Blend in the avocado, milk and nuts.
Lastly add the flour and mix gently but thoroughly until the ingredients are moistened and combined.
Place in pans and sprinkle each with topping.
Bake for 20 to 25 minutes.
Note: Add a dash of grated lemon rind.
Almonds may be toasted quickly in the microwave or in a dry frying pan, stirring constantly to stop burning.

Spicy Meat Balls ‘N Sauce - Recipe

1 1/2 lb Ground beef

3/4 c Quaker Oats, uncooked

– (quick or old-fashioned) 1/4 c Chopped onion

1 ts Salt

1/4 ts Oregano

1/4 ts Pepper

1 Egg

1/2 c Milk

———————————–SAUCE———————————– 1/2 c Chopped onion

1/3 c Chopped green pepper

1 lb Canned tomatoes

8 oz Tomato sauce

1/2 ts Salt

1/4 ts Garlic powder

1/4 ts Cayenne

1/4 ts Oregano

1 Bay leaf

For meat balls, combine all ingredients thoroughly.
Shape to form 12 meat balls.
Brown in a small amount of shortening in large skillet.
Remove meat balls.
For sauce, lightly brown onion and green pepper in drippings.
Add remaining ingredients; simmer over low heat about 15 minutes.
Add meat balls to sauce; cover and simmer about 45 minutes.
Remove bay leaf.
Serve with hot buttered rice.
