Salt River Nachos

1 pound ground beef
1 large onion, chopped
1 (15 ounce) can refried beans
1 pound sharp Cheddar cheese, grated
1 (8 ounce) bottle taco sauce, mild or hot
1/2 head lettuce, shredded
2 cups sour cream
1 1/2 cups guacamole
1 small can chopped ripe olives
Corn chips

Brown beef with onion; drain.
Spread beans on the bottom of a 13- or 14-inch pizza pan.
Spread meat mixture over beans and pat down.
Pat cheese onto meat.
Drizzle taco sauce over all.
This may be refrigerated up to 48 hours at this point.

When ready to serve, preheat oven to 375 degrees F and bake for 18 to 20 minutes.
Remove from the oven and sprinkle with lettuce. Add sour cream on top of lettuce and spoon guacamole on top of sour cream.
Sprinkle drained olives over all.

Serve with corn chips for dipping.

Ingredients

1 oz white creme de cacao
1 oz vodka
1/3 oz green creme de menthe

Method

Shake briefly with three-quarters of a glassful of crushed ice. Serve with a short straw in an old-fashioned glass.

Fudge Pudding Cake

1 c Sifted flour

2 ts Baking powder

1/2 ts Salt

1/2 c Sugar

3/4 c Chopped walnuts

1/2 c Milk

1 ts Vanilla

2 tb Melted shortening

1 oz Unsweetened chocolate

- melted 1/4 c Unsweetened cocoa powder

3/4 c Brown sugar, packed

1 3/4 c Hot water

Whipped cream (optional) OR - ice cream Sift flour with baking powder, salt and sugar into bowl.
Add nuts, then stir in milk, vanilla, shortening and chocolate.
Spread batter in greased 8-inch square pan.
Mix cocoa with brown sugar, stir in hot water and pour

over batter.
Bake at 375F 40 minutes.
As pudding bakes, cake layer forms on top with rich sauce on bottom.
Spoon warm pudding cake into dessert dishes and top with whipped cream or ice cream, if desired.
